California Walnut Varieties

Walnut production takes commitment and patience, and orchards are dedicated only to walnut production. After a walnut sapling is planted, it takes five to seven years for it to grow into an adult tree suitable for harvesting. Although many varieties of walnuts are grown in California, six account for over 75 percent of total production: Hartley, Chandler, Serr, Vina, and Howard.

Sizing

Walnuts vary in size from baby to 34mm+. Sizes available for Hartley, Howard and Chandler walnut varieties.

  • Jumbo+: 34 mm
  • Jumbo: 32 mm
  • Large: 30 mm
  • Medium: 28 mm
  • Baby: smaller than 28 mm

Bleaching

Traditionally walnut shells have been bleached to clean the shells and make them bright.
